Is it ok to refer to a real person in a book without affecting copyright laws?

Is it ok to refer to the name of a real person in a book without saying there name even if you have the authors thanks say before the book starts you will have to involve the signing of a indemnity agreement to use there real name in a later book. would it be ok to put there real name into a cipher and have them decode it like the keyword was there last name?
